For a healthy and absolutely divine breakfast, treat yourself with a bowl of beautiful summer fruits, nuts and seeds and a splash of heavenly coconut cream!
To serve 1, all you need is:
- 1/2 a mango
- 1/2 a pear
- 1 banana
- 6 cherries, pitted
- A handful of nuts of seeds
- A splash of coconut cream
It is such a yummy way to get a big bowl of fruit in to your belly first thing in the morning and the coconut cream makes it so rich and creamy. I assumed that coconut cream was probably not the healthiest addition to my breakfast, but after doing a little bit of research, it turns out it is actually very very good for you – bonus!
The interesting thing about coconut cream or coconut milk is that, while it is high in fat, it contains a type of fat called medium-chain triglycerides, which are oxidized by your body in a different manner than other fats. Medium-chain triglycerides, also called MCTs, are burned rapidly, and according to research published in the November 2010 edition of “International Journal of Food Sciences and Nutrition,” consumption of medium-chain triglycerides can enhance fat and calorie burning, making them beneficial for improving your body composition. So there you go, healthy fat. 🙂
Another delicious option, which is even healthier, is raw banana soft serve ice-cream, topped with mango and fresh coconut.
Chop up some banana and put in a container and freeze overnight. Take it out of the freezer and thaw slightly before putting it into the food processor. Keep processing until smooth and fluffy. Top with mango and fresh coconut flesh. To get fresh coconut flesh, you will need to buy a young thai coconut, open it, drain out the juice (drink this as it is yummy and very nutritious) and scoop out the flesh.
